Analysis of the polyphenolic profile of local varieties of globe artichoke (Cynara scolymus) The total polyphenolics content and their qualitative and quantitative profiles were determined in the heads and leaves of several local varieties of globe artichoke (Cynara scolymus). The analyses revealed a discrete variability in the amounts of both total polyphenolics and their components of greater nutraceutical interest. A partial cDNA clone encoding a 3' flavonoide hydroxilase (F3'H), a key enzyme of luteolin biosynthesis, was also isolated and its expression analysed in different organs of the plant.
