Abstract:
Since many years, the use of image dicital analysis is widely widespread in several industria lields. In the food industry, this technique is able to give many accurate quati-quantitative informations about size, colour, and texture of a food product, furthermore it eliminates the common "subjectivity" of a manual anaiysis. Aim of the present work is to evaluate the efficiency of a combined process of osmodryrg-drying to produce edried apples Quality of oned products was studied through this digital technique by monitoring appies browning dur rg room temperature storage.
