This PhD thesis research project is aimed at the achievement of engineered bioprobes as rapid, effective and in situ operating devices for study and identification of chemical-toxicological hazards in liquid food matrices. For this purpose two bioprobes will be developed: i) yeast cell amperometric bioprobe for studying of mitochondrial effect of milk contaminated bioactive substances (e.g. bisphenol A); ii) optical bioprobe with transgenic microbial cells as biomediators for semi or quantitative detection of veterinary antibiotic residues in milk samples.
