Caratterizzazione biochimica e nutrizionale della collezione di grano orientale (Triticum turanicum Jakubz) conservata presso l USDA

Abstract:
Oriental or khorasan wheat, together with einkorn, emmer and spelt, belongs to teh so-called "ancient wheats". the utilisation of oriental wheat in breeding programmes aimed to the selection of improved varieties is restricted by the scarce knowledge of characteristics of its germplasm. To shed light on biochemical traits of Oriental wheat, gliadin and albumin electrophoretic profiles, as well as protein, ash and pigment content were investigated in the collection helfd at USDA (USA). The comparison of the electrophoregras obtained by capillary electrophoresis, has hallowed the identification of 14 gliadin patterns and 8 albumin patterns. The association of these patterns gave rise to 25 combinations. The low variation detected in the collection suggests that some accessions could be duplicates of the same genetic stock. The high pigment content recorded in whole meal of tested accessions could be very interesting for breeders.
