Abstract:
The essay presents the results of a study carried out at the State Archives of Avellino with the aim of recovering the food table used in the most important institutions of the time: prisons, hospitals, schools, orphanages. These tables, together with the results of the first statistical surveys, offer the picture of the eating habits of the population of the Principality Ultra, but above all they are a mirror of the living conditions of the different social classes and of even more specific categories in the historical period identified.
