Abstract:
The present work deals with a novel packaging system for the storage of fresh mozzarella cheese, based on gel of natural polysaccharides, which is able to preserve its physical, organoleptic and nutritional characteristics for long periods, without necessity of sterilizing milk or the final product. The results of visive analysis, microbiological tests and pH measurements on mozzarella stored in the innovative gel up to 15 days demonstrate that mozzarella preserves the physical and microbiological properties typical of the fresh cheese.
