Abstract:
Among foods pasta has always been one of the basic foods of the "Mediterranean diet" and it is so substantial to be a real indicator of "civilization" as only a few other products, can boast which are fruit of men's labour and intelligence. It is a food that since the old age has shown major cultural and technical-productive implications to be still at the center of a lively medical and dietary discussion, as well as economic and productive discussion in the industry. Around cereals and pasta production it has grown, therefore, a model of civilization that continues to be a factor of development, nurturing and dialogue among people
