Commonbeanproductionaccountstoabout23millionmetrictonsandrepresentsonethirdofthetotalworldproductionofpulses.Duetoitsenergy,protein,dietaryfibreandmineralscontent,commonbeanisthemajorstaplefoodforaboutonebillionpeoplelivinginEasternAfricaandSouthAmericaanditsconsumptionisalsoencouragedindevelopedcountries.Nevertheless,beanshaveseveraldisadvantages:theyrequirelongcooking-timeandseedproteinsarepoorlydigestedandlowinsulphuraminoacids.Moreover,seedsaccumulateanti-nutrients,suchaslectins,phyticacid,tanninsandraffinosaccharides,thathamperitsnutritionalvalue,reducemicronutrientsbioavailabilityandcausestomachdiscomfortandflatulence.
