The trial was carried out on 16 young Podolian bulls, divided into two groups:
an "extensive rearing" group, reared exclusively on pasture and a "half-extensive rearing"
group, with feeding supplementation. Bulls were slaughtered at the age of 18 months. The most
representative muscles were sampled after a chilling period of 7 and 14 days, for the right and
left hindquarters, respectively. The fatty acid profile of the fat was determined and data were
analysed by ANOVA in order to evaluate the effect of muscle, chilling period and feeding
system. The lowest SFA content was observed in Gluteobiceps, Gluteus superior and
Semimembranosus muscles; Gluteus superior, Semimembranosus and Semitendinosus muscles
had the highest incidence of MUFA. Gluteus superior, Semimembranosus, Semitendinosus and
Vastus lateralis had the highest amount of PUFA.
