Tyrosinase from Agaricus bisporus: a new method of purification

Brief description: Purification of Agaricus bisporus Tyrosinase is a difficult procedure because of the oxidation of natural substrates occurring during the extraction phase leading to tanning of enzymes and formation of melanin-like compounds. The procedure we used permits to avoid oxidation of phenolics by using a sodium ascorbate solution, to keep them in the reduced form during the extraction phase until their removal by diafiltration.
