abstract:
The aim of this work was the geographical discrimination of roasted and ground African and American Coffea arabica with the aid of 1H NMR (Nuclear Magnetic Resonance) spectroscopy and multivariate statistical analysis. The water extracts allowed detection of soluble metabolites in a single experiment. The OPLS-DA protocol performed on NMR data led to a good differentiation of samples according to their provenance, highlighting the metabolites responsible for the discrimination.
