abstract:
Fruit juice clarification, stabilization, depectinization, and concentration are
typical steps where membrane processes such as microfiltration (MF), ultrafiltration
(UF), nanofiltration (NF), reverse osmosis (RO), osmotic distillation (OD), and membrane
distillation (MD) are successfully utilized as alternative technologies to the traditional fruit juices production. This Chapter provides an overview of integrated membrane systems in fruit juice processing highlighting specific advantages over conventional methodologies.
