abstract:
In the last years there has been a growing
interest toward minimally processed fruits and vegetables
for their convenience of use and freshness. So'
far, the major share of the market in Italy is mainly
veqetables, whereas the consumption of fruit is stili
limited to few species ..This could be in part due to the
high perishability of cut fruit which have a very short
shelf-life. This' study was aimed at evaluating the
potential of different cultivars of mandarins and mandarin-
like to be minimally processed. Different technological
solutions in the operations of peeling and division
of the segments were tested.
