Studi NMR sull'aceto balsamico tradizionale di Modena

abstract:
Proton and carbon nuclear magnetic resonance spectroscopy was applied to the analysis of Balsamic and Traditional Balsamic vinegar of Modena samples (ABM and ABTM, respectively). Homo- and hetero-nuclear multidimensional high field NMR spectroscopy (11.7 Tesla) allowed the characterization of ABM and ABTM main metabolite. The combination of NMR data and multivariate statistical analysis(PCA) allowed both ageing and quality determination. Furthermore, comparison among different balsamic vinegars has been performed.
