abstract:
Novel tastes provide valuable information about the nature and quality of food that is critical for animal survival. Taste novelty is able to directly modulate learning and to promote the environmental adaptation of different species. This chapter aims at providing the reader with a comprehensive knowledge of the definition of taste reactivity, taste neophobia, habituation, and predictivity.
