Abstract:
The technique of pressing of the olives is
very old, dating from the Neolithic period in which the
hunter-gatherer humans had discovered its therapeutic
food and managed to extract the oil by rubbing
stones. The first evidence on the extraction of olive oil
are of the first millennium before Christ and be found
on amphorae of the museums of Haifa (Israel) and
Heraklion (Crete) where scenes of beating and pressing
presses rudimentary. In later centuries the wooden
presses is passed to the presses in stone that had
spread in the Mediterranean region and used until a
few centuries ago. Today, oil extraction systems are
extremely industry.
