The subject is reviewed under the following headings: classification of wheat storage proteins; analysing wheat storage proteins (electrophoretic and chromatographic techniques); chromosomal location and genetics of wheat storage proteins; use of seed storage proteins in genebank activities (use of wild and cultivated species in exploiting genetic resources, studies of the genetic structure of germplasm and storage proteins and wheat evolutionary relationships); mutants for wheat storage proteins; use of storage protein variability in improving technological properties of durum and bread wheats; and storage proteins and nutritional value.
