Climate changes influence the occurrence of different toxigenic fungi on different crops worldwide. In particular, on cereals, highly sensitive to the contamination of toxigemnic fungi, new toxigenic fungi populations, provided of specific profile of mycotoxins, can occur at worldwide level. The chapter provide an overview of the major changes of mycotoxins producing fungi occurrence on cereals in Europe due to the dramatic changes of main environmental conditions in the different geographical areas.
