Control by calorimetry of the efficiency of an ultrasonic process of emulsification

Abstract:
Within the framework of a project devoted to the study in microgravity of the stability of emulsions, a process emulsification involving ultrasounds has been set up. For that purpose, the aqueous and oil phases are directly introduced in an aluminium cell a few cc in volume. The sealed cell is submitted to a regular cooling heating cycle. During this cycle the solidification and melting temperatures and energies of the aqueous phase are determined. As these quantities are dependant of the dispersion state of the aqueous phase, it is possible to test the efficiency of the process of emulsification to get a water in oil emulsion. Examples will be described in correlation with the formulation of the emulsion and the emulsification process.
