H-1 multi-echo, chemical shift selective and 3D NMR imaging at microscopy resolution, as well as CP/MAS C-13 NMR spectroscopy have been applied to the study of oil and water distribution in olives, with particular attention to the seed reserve substances and their mobilization during fruit maturation.
