Abstract:
Cynara cardunculus L. var. Altilis is an edible herbaceous plant typical of Mediterranean Areas. This plant is widely used in food and medicine for his nutritional and therapeutic properties. In this study HRMS and NMR techniques have been applied for isolation and characterization of secondary metabolites in by-products of cardoon.
