abstract:
Most systems of biological relevance, from hydrated proteins and phospholipid/water dispersions to whole tissues and membranes, as well as food and some hydrated polymeric materials, are dynamically heterogeneous, being essentially constituted by a liquid component, mainly water, in contact with a solid-like proton- rich macromolecular matrix.
