The food-ethnoscapes, in the form of sole traders, have been identified, using a quantitative analysis
approach, for two neighborhoods in Rome that, even though presenting very different structural
characteristics, are the icons of this phenomenon in the city: Esquilino and Torpignattara. The work
developed so far has led to the production of a series of interactive maps that, inside the Capital
area, allow the localization of the geographical distribution of food-related commercial activities
owned by a foreigner. A Neogeography approach has been chosen for the representation of the
spatial distribution of the above mentioned activities. By means of this new methodology and the
use of dedicated open-source software, it was possible to simplify the GIS complex cartographic
techniques and to create maps accessible by non-expert users.
